Cabernet Sauvignon by Bonterra Organic Vineyards

This month , I have been showing you some of my favorite wines, and the meals I like to pair with them. Today, I am pairing our meal with a Cabernet Sauvignon made by Bonterra Organic Vineyards. They specialize in Organic & Biodynamic Farming (www.bonterra.com if you want to learn more about their methods). I have tried several of their wines both whites and reds and I find their wines to have a really clean taste and they are really easy to drink (which isn’t always a good thing). You can find their wines right in the grocery store, liquor section.

The Meal

When I think of the full-bodied Cabernet, I think of a fatty red meat. So I chose to do a fresh Ribeye steak, pan-fried with really simple seasonings. I did just a sprinkle of sea salt and black pepper to each side of the steak before frying. I don’t believe in killing my meat twice so I seared it for about 8 minutes on each side until it was cooked to a medium temperature.

I also made some sweet potato mash, as I figure the natural flavors of the sweet potato would complement the tannins in the wine. I cut the potato into chunks, skin on and boiled them until that were soft enough to easily mash. Then I added some butter a little milk and some salt and pepper to taste and chives, again keeping the seasonings very simple and light.

For the vegetable, I did some asparagus, just because I am trying to add a bit of green to every meal I eat. I sautéed those in a bit of olive oil and some minced garlic until they where tender but still had a nice crunch to them.

Pairing Results

The meal paired with the Cabernet Sauvignon was really good. The flavors from the foods and wine went hand in hand and was really easy to eat and drink together. I have to point out that I did not use any steak sauce, because I thought it might possibly clash with the wine.
